One of the main reasons our wagyu brisket is so exceptional is the consistent marbling and generous fat cap. The fat melts through and continually bastes the meat from within as you cook the brisket, resulting in a tender, juicy texture. Good but extremely expensiveI ordered the 12 lb brisket which cost me $400. Eventually yielded 5 lbs of usable meat (down from 12 where I started). I made a brisket using the flat cut and burnt ends using the point cut. Yielded 3.5 lbs of brisket and 1.5 lbs of burnt ends. Trimmed away 2.5 lbs of fat from the original 12 lbs so pre cooking/smoking starting weight was 9.5 lbs. smoked for 14 hours at 225-250 degrees using hickory wood for smoke. Ultimately I did not think it was worth getting the Wagyu brisket at $80/lb of usable cooked meat, however tender it was. You can get meat identical results from USDA prime
