This popular cut, taken from the breast, lends itself to a wide variety of uses from braising to smoking to curing for corned beef.Traditionally, brisket is cooked long and slow to ensure the tenderness of the finished dish. Lower-grade briskets have rather lean meat and a cap of fat that can vary in thickness.Our USDA Prime brisket has abundant marbling that bastes the meat from the inside as it cooks and a substantial fat cap that bastes the meat from the top down throughout the entire cooking process.In Texas where the word barbecue is synonymous with beef, brisket is a smoke-pit staple. So with a tip of our hat to a tasty Texas tradition, we suggest putting this brisket in your smoker over mesquite for 14 hours or so—you’ll think you found heaven on earth.

Outstanding!Delivery was fast and fresh. Cooked the 9 lb brisket over mesquite for 12 hours following Aaron Franklin’s recipe - phenomenal. Will be ordering again (and again)!

Da best I've ever had!Aaron Franklin... move over budy, because my 9-hour smoke of this bad boy turned out to be the best most flavorful and juicy brisket I've ever had. Wow... didn't do much other than S&P, some Oakland Dust beef rub... 225 for 6-hours then foil wrapped for 3 hours... pulled at 203 and let rest for an hour and half... wow, wish I could post photos.

Fabulously tender and flavorful brisket! I cooked this the old-fashioned way -- low and slow then sliced it covered it again with the sauce (garlic powder canned cranberries and tomato sauce also very old school) and put it back in the oven for another hour. It was wonderful -- and universally praised!

Lobel\s ....when nothing but THE BEST will do. Lobel\s Prime briskets are simply the best. Briskets can be tricky to prepare right especially those that come from the local supermarket. They often turn out dry and/or tough after spending many hours and working so hard to prepare them. This is not the case with Lobel\s prime briskets. I\ve done 5 Lobel\s briskets so far and they always turn out exceptionally juicy tender flavorful and succulent. I\ve been told numerous times by the most finicky BBQ connoisseurs that it\s the best brisket they\ve ever put in their mouths ! The secret to top notch brisket starts with the meat itself and it just doesn\t get any better than Lobel\s.

Wonderful first cut brisket This was our first order from Lobel\s. The brisket was wonderfully butchered. The fat cap was a little thick so I trimmed it down to closer to an 1/8\ compared to the ¼ to 3/8. The other side of the flat was beautiful with virtually no fat or silver skin.\nSmoked it for 9 hours at 225 and it was the best brisket that I\ve cooked so far. (I\m still learning how to smoke so maybe 10 so far.)\nJust order a full packer as well as another first cut for Labor Day weekend.\nThanks for the great meat.
