The hanger steak is a muscle that helps support the diaphragm and is so called because it hangs independently (as opposed to being connected to a bone—hence the nickname "hanging tender") between the rib and the loin—there’s only one per animal. The whole steak is formed in two lobes, separated by tough vein. We remove the vein from our hanger steaks so you get both lobes in one package.The hanger steak is a supportive muscle, rather than active muscle, so it is more tender than a muscle the animal uses a lot, the leg for example. The muscles that yield flank and skirt steaks are located roughly in the same area as the hanger and are also known for their prominent beefy flavor.Hangers are sometimes also called the “butcher’s tenderloin” because butchers would put it away for themselves, rather sell it at retail because many consider it an unattractive cut. Best cut of beef IMO Hanger remains my favorite cut of beef: I think it has the beefiest flavor there is zero waste since there is no gristle sinew bone or unrendered fat. It\s a forgiving cut of meat when you cook it too. This being Wagyu it resides at the pinnacle.

Really good steak reasonable price I just prepared these wagyu hanger steaks for my wife and me. Very simple salt pepper garlic and onion powder. Easily the best steak I have ever eaten. The portion sizes were perfect. The steak arrived perfectly trimmed with no additional touch ups needed. I’ve had hanger steak before and had to do a fair amount of trimming to remove the silver skin/gristle between the lobes and these quite different: absolutely perfect. The flavor was as good or better than a ribeye and every bit as tender as tenderloin. I will definitely order these again in the near future.
