Turkey-Sage Burgers

Ground turkey is showing up more and more in butcher shops and supermarket meat departments. When buying it, make sure it's ground from turkey breast. However, as healthful as ground turkey may be, it tends towards dryness. Here, the lemon juice adds a little moisture while accentuating the turkey's mild flavor.

    4 teaspoons fresh sage, chopped
    1 tablespoon fresh lemon juice
    2 teaspoons fresh thyme, chopped
    salt, to taste
    pepper, to taste

Directions

    Combine the turkey, sage, lemon juice, thyme, salt, and pepper in a large bowl. Using your hands, mix well. Form into 6 patties. Refrigerate until ready to grill.
    Prepare a charcoal or gas grill. Lightly spray the grill rack with vegetable oil cooking spray. The coals should be hot.
    Grill the burgers for 6 to 8 minutes. Turn and grill for 5 to 7 minutes longer for medium-well burgers. The juices will run clear when the burgers are pressed gently with a spatula.

Tips:

Moist hands help when forming these patties, as does well-chilled meat.
