All-American Veal Loaf

A meatloaf is a dish that usually takes a minimum of preparation and little watching. It is a hearty dish loved by adults and children alike. Here is a classic meat loaf made with veal.

    3 pounds ground veal
    1 cup onion soup
    1/2 cup light sweet cream
    1/4 pound mushrooms, finely chopped
    pepper, freshly ground
    6 strips bacon, precooked and crumbled
    1/2 green pepper, finely chopped

Directions

    Place ground veal in a large mixing bowl.
    Meanwhile, simmer onion soup in saucepan for about 15 minutes.
    Add cream, mushrooms, and salt and pepper. Allow to simmer for 5 to 10 minutes, but do not boil.
    Allow to cool and then add to veal in bowl.
    Mix well and then refrigerate for half an hour or more.
    Preheat oven to 350 degrees Fahrenheit.
    Have a greased 4" x 8" baking pan in readiness and smooth the meat mixture into it. It will be slightly rounded on top and look like a loaf of bread.
    Now, with a knife or your index finger, make crisscross indentations on top of the "loaf."
    Sprinkle these crisscrosses with the crumbled bacon and green pepper pieces.
    Bake for 1 hour.

Serving Suggestions:

Serve with fluffy mashed potatoes and broiled tomatoes.
