Lobel’s Heritage Meats

The Old–Fashioned Way to Buy Meat

All-Natural  •  Pasture-Raised  •  100% Vegetarian Diet
No Subtherapeutic Antibiotics  •  No Growth Hormones

What is Heritage Meat?

Lobel’s Heritage Meat Program harkens back to a bygone era—the way cattle were raised, the way meat was prepared and purchased. Ordering Lobel’s Heritage Beef and Pork is a totally customized process that integrates the Lobels’ artistry as butchers and the customer’s family and entertaining preferences.

Lobel’s Heritage Beef and Pork come from pure- and cross-bred livestock from rare and endangered breeds. The steers and pigs in the program are raised on the open pastures of small family-owned farms in New York State and throughout New England. The livestock’s feeding regimen comprises a 100% vegetarian diet. In addition, these steers and pigs are free of subtherapeutic antibiotics and growth hormones.

Meat With a Purpose

Many farmers who practice breed conservation do it now as an avocation—along with day jobs and raising kids. They employ environmentally friendly agricultural and humane livestock-management practices. By creating a successful market for their artisanal meat products, these breeds will be propagated for generations to come.

Not only are Lobel’s Heritage Meats the very best tasting, pasture-raised beef and pork on the market today, their sales help:

  • Preserve endangered livestock breeds by making their propagation economically viable
  • Support sustainable, environmentally friendly agricultural practices
  • Support the small, family farms that are dedicated to breed conservancy, yet need a marketplace for their products to make their efforts economically viable

Dry-Aged Heritage Beef

Grass-Fed, Grass-Finished • Dry-Aged • All-Natural • Pasture-Raised
No Subtherapeutic Antibiotics • No Growth Hormones • 100% Vegetarian Diet

Our heritage beef cattle are raised on small, family farms in New England and New York State. The farmers preserve historic and endangered breeds of livestock and promote their propagation to advance farmland preservation, biodiversity, and sustainable agricultural practices.

Raised on the lush pastures, these heritage cattle are grass-fed, grass-finished and come from such breeds as Galloway, Hereford, Devon, and Highlander. They are also high in Omega 3 oils and lower in fat: Grass-fed beef is significantly less marbled than the richly marbled USDA prime beef we sell. Plus, we dry age heritage beef for up to six weeks to ensure maximum tenderness and distinctive beefy flavor. The cattle are processed at the USDA-approved processing facilities.

Heritage Pork

Luxuriously Marbled • All-Natural • Pasture-Raised
No Subtherapeutic Antibiotics • No Growth Hormones • 100% Vegetarian Diet

Tucked away in the rolling hills that link New York State to Vermont, pure-and cross-bred Tamworths, Gloucestershire Old Spots, and Large Blacks forage among fresh grass and clover in movable, open pens of Flying Pigs Farm. Their hospitable and stress-free environment is complemented by a feeding program that is free of subtherapeutic antibiotics and growth hormones.

Our heritage pork is unlike any other—a taste so deep and rich it echoes the flavor of pork from a bygone era. The meat is intensely marbled and—whether grilled, smoked, roasted, sautéed, stewed, or braised—yields the most exquisite juiciness and tender texture.

Placing a Heritage Meats Order

When custom-cutting a whole or half steer or pig, we will guide you though our recommended approach, based on our decades of experience in working with customers of widely varying tastes and needs.

Please keep in mind:

  • Supplies are extremely limited and, therefore, subject to availability.
  • Advance ordering is required—Heritage Meats orders require a six- to eight-week lead time.
  • Specific breed purchases are not possible.
  • Pricing is based on the actual weight of the whole or half steer or pig or beef primal.

How Do I Place an Order?

From initial inquiry to date of delivery, the entire process of ordering Heritage Meats takes about six to eight weeks. That includes time for processing, dry-aging, custom-cutting, freezer-safe wrapping, flash freezing, and shipping. Here's how it works.

  • Call our administrative offices at 1-866-595-6235.
  • First, we have an initial consultation to discuss whether you want a whole or half steer or pig or beef primal.
  • After this initial discussion, we will contact our farms and reserve your selection.
  • Once we have your selection reserved, we will contact you:
    • With estimated dates for processing and delivering your order.
    • To review your cutting options and determine your custom cutting plan based on your preferences.
    • To estimate the pricing of your order and process a non-refundable deposit.
  • Within two weeks of shipping, we will notify you of the final pricing and confirm the delivery date.
  • All meat products will be delivered to you frozen.
  • Once purchased, the heritage meat products cannot be returned.
